A Brief History of the Jungle Bird

The Jungle Bird cocktail was created in 1978 at the Aviary Bar in the Kuala Lumpur Hilton. Unlike many tropical cocktails of the era, the Jungle Bird stood out by introducing Campari, an Italian bitter aperitif, into a rum-based, pineapple-led drink.

This unexpected pairing marked a turning point in tropical cocktail culture, bridging tiki-style flavours with a more bittersweet, aperitif-driven structure. Over time, the Jungle Bird has earned its place as a modern classic, celebrated for its balance of richness, acidity, sweetness, and bitterness.

Today, it’s often cited as one of the earliest examples of a “grown-up tropical” cocktail, refreshing yet complex, and far removed from overly sweet resort drinks.

Ingredients

  • 50ml Blackstrap Rum
  • 15ml Campari
  • 45ml Pineapple juice
  • 15ml Freshly squeezed lime juice
  • 10ml Simple syrup*
  • Garnish: pineapple wedge and maraschino cherry
  • Ice

Method

  • Add the ingredients into the shaker with ice and shake
  • Strain into a tiki/rocks glass filled with ice
  • Garnish with pineapple wedge and maraschino cherry

What are the best rums for a Jungle Bird?

Blackstrap / Molasses-Heavy Styles (bold, bittersweet)

Cruzan Black Strap Rum - A classic Jungle Bird choice. Deep molasses, coffee, liquorice, and burnt sugar notes echo Campari’s bitterness rather than fighting it. Creates a dark, brooding Jungle Bird with serious presence.

Goslings Black Seal - Technically not a true blackstrap, but very close in weight and flavour. Rich caramel, spice, and a subtle smokiness give a rounded, accessible Jungle Bird that still feels grown-up.
